The name Kaldero, meaning ‘pot’ in Tagalog, reflects the restaurant’s ethos: a vibrant, contemporary restaurant that promises to be a cultural hub in Dublin, celebrating the best of Asian flavours, contemporary design, art, and music.

Inspired by the bold and vibrant culinary traditions of The Philippines, South East Asia and India, the collaboration menu has been crafted by three acclaimed chefs,: Richie Castillo, Daren Liew, & Alfred Prasad, India's youngest chef to be awarded a Michelin star.

The menu at Kaldero is designed for a shared dining experience, offering small plates, sharing mains and sides, complemented by a cocktail and drinks menu created by Gareth Lambe, founder of the Vintage Cocktail Club.

Collaborative Vision

Kaldero will bring a fresh, modern twist to these three distinct cuisines, showcasing the richness and depth of their traditional flavours while embracing innovation. The menu will feature small plates and sharing-sized mains, designed to be enjoyed together. Some of the standout dishes include Chicken 65, Laksa Beef Rib, Saag Burrata, Dynamite Lumpia and Gula Melaka Sticky Pork.

Kaldero’s interiors combines rich reclaimed timber, terracotta tiling, and warm natural materials to create an inviting yet sophisticated environment. The design is an immersive blend of contemporary Asian elements and natural warmth, ensuring guests feel relaxed while experiencing the restaurant’s innovative menu. The art on display adds a layer of depth and creativity.

At Kaldero, music is an integral part of the atmosphere, carefully curated by Uly, an Irish-Filipino musician renowned for blending neo-soul, R&B, and indie-pop. The thoughtfully crafted soundtrack creates a soulful and immersive ambiance, enriching the dining experience and adding an energetic layer to the overall environment.
