We are currently seeking a passionate and dedicated Head Chef to join the opening team in for our new, luxury boutique hotel, The Leinster Hotel, in Dublin 2. This hotel will have a high-end, premium, roof top restaurant with views of the city.
- Design and develop menus in line with concepts and quality standards
- Oversee the kitchen, ensuring weekly menu preparation, food ordering and stock taking
- Food innovation and menu engineering
- Organisation of kitchen to ensure effective resourcing
- Ensuring the highest food standards
- On-going development of food strategy for the unit
- Responsible to ensure that food hygiene standards are implemented, maintained and that all records are completed in line comply with company procedures, and H.A.C.C.P requirements
- Be a role model for the principals and implementation of all Food Safety systems and practices
- Management of costs in line with budgetary requirements
- Be aware of expenditure and retain efficient budget control in the kitchen focusing on the key impact areas
- Maintain strict control of the stock in terms of ordering, rotations and ensure that stock is kept at an acceptable level to cover food, cleaning products and crockery
- Delivery procedures must be followed ensuring that all stock is secure and accurate, records and stock checks are completed
- Previous Head Chef experience in a high-end venue
- A passion for high end cuisine and a desire to create the strongest team and product in our industry
- A desire to work in a opening restaurant project
- High level of organisation
- Ability to train staff to a high level of knowledge
- Setting goals to grow the business
- Strong understanding of business management
- Providing leadership and direction to all employees
- Ability to keep staff motivated
- Ability to assign sections and delegating tasks
- Ability to effectively liaise with manager to ensure quality off food and service delivered is up to standards as well if there are any missing items from menu to bring in staff attention
